- 2 cloves garlic, chopped
- 1 onion, chopped
- 1-4 chillies (to taste), no seeds
- 1 stalk lemongrass use only the tender inner part
- 1 cup coconut milk
- 1 teaspoon tamarind paste
- 1 teaspoon fish sauce
- 3 tablespoons palm sugar or brown sugar
- 1/2 cup roasted peanuts, processed until smooth

- Heat peanut oil in a pan over medium heat.
- Gently fry garlic, onion, and chillies, stirring constantly.
- Stir in lemongrass, coconut milk, tamarind paste, fish sauce, and palm sugar.
- Add processed peanuts and mix well, stirring constantly over low heat.
- Continue to cook until the sauce is fairly thick. It can be diluted to desired consistency.
- Discard the lemongrass stalk.
- Serve as a dipping sauce for raw vegetables.
