  • 2 tbsp peanut oil
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • 1-4 chillies (to taste), no seeds
  • 1 stalk lemongrass use only the tender inner part
  • 1 cup coconut milk
  • 1 teaspoon tamarind paste
  • 1 teaspoon fish sauce
  • 3 tablespoons palm sugar or brown sugar
  • 1/2 cup roasted peanuts, processed until smooth

  • Heat peanut oil in a pan over medium heat.
  • Gently fry garlic, onion, and chillies, stirring constantly.
  • Stir in lemongrass, coconut milk, tamarind paste, fish sauce, and palm sugar.
  • Add processed peanuts and mix well, stirring constantly over low heat.
  • Continue to cook until the sauce is fairly thick. It can be diluted to desired consistency.
  • Discard the lemongrass stalk.
  • Serve as a dipping sauce for raw vegetables.
