- 20 ml olive oil
- 125 ml pine nuts Reduced from 2 cups to 1/2 cup for balance
- 750 g lamb mince
- 2 brown onions, chopped
- 2 garlic cloves
- 2 Birds eye chillies, de-seeded and finely chopped (or use 1 tsp chili flakes)
- 20 ml ground coriander
- 20 ml ground cumin
- 500 g spinach, trimmed and chopped
- 4 large pita breads
- 300 ml yoghurt
- 20 ml lemon juice
- 62.5 ml fresh mint leaves, chopped Converted from 1/4 cup

- Heat half of the oil in a pan over medium heat. Stir-fry the pine nuts until lightly browned. Drain on paper towel.
- In the same pan, stir-fry the lamb in batches until browned. Remove from the pan.
- Add the remaining oil to the pan. Stir-fry the onion, garlic, chilli, coriander, and cumin until the onion is softened.
- Add the lamb, pine nuts, spinach, and mint to the pan. Stir until the spinach is just wilted.
- Divide the lamb mixture among the pita breads and serve with the combined yoghurt and lemon juice.
