Materials

Base Ingredients

  • 3 cloves garlic crushed
  • 100 g white bread crusts removed
  • 100 ml olive oil
  • to taste salt & pepper
  • 250 g ripe red tomatoes peeled
  • 125 g peeled cucumber
  • 100 g green pepper (capsicum)
  • 50 ml vinegar (white wine)
  • 10 g cumin seeds
  • 250 g ice

Optional Garnish

  • 100 g purple tomatoes for service to garnish
  • 50 g finely chopped onion
  • 50 g finely chopped coriander
  • 50 g finely chopped pepper
  • 200 g finely chopped avocado
  • 50 g finely chopped tomato

Instructions

Preparation

  • Place crushed garlic in a bowl.
  • Add cut-up bread (small pieces) and mix well.
  • Add olive oil and mix. Season with salt and pepper.
  • Place peeled tomatoes, cucumber, green pepper, and cumin seeds in a blender.
  • Add vinegar and blend until smooth.
  • Gradually add the bread mixture and blend until well combined.
  • Add ice and blend until the soup is chilled.
  • Serve chilled, garnished with optional ingredients.

Notes

Adjust seasoning to taste. For a smoother texture, strain the soup before serving.
