Materials
Base Ingredients
- 3 cloves garlic crushed
- 100 g white bread crusts removed
- 100 ml olive oil
- to taste salt & pepper
- 250 g ripe red tomatoes peeled
- 125 g peeled cucumber
- 100 g green pepper (capsicum)
- 50 ml vinegar (white wine)
- 10 g cumin seeds
- 250 g ice
Optional Garnish
- 100 g purple tomatoes for service to garnish
- 50 g finely chopped onion
- 50 g finely chopped coriander
- 50 g finely chopped pepper
- 200 g finely chopped avocado
- 50 g finely chopped tomato
Instructions
Preparation
- Place crushed garlic in a bowl.
- Add cut-up bread (small pieces) and mix well.
- Add olive oil and mix. Season with salt and pepper.
- Place peeled tomatoes, cucumber, green pepper, and cumin seeds in a blender.
- Add vinegar and blend until smooth.
- Gradually add the bread mixture and blend until well combined.
- Add ice and blend until the soup is chilled.
- Serve chilled, garnished with optional ingredients.
Notes
Adjust seasoning to taste. For a smoother texture, strain the soup before serving.
