Materials

Soup Base

  • 3-6 cloves garlic crushed
  • 100 ml Spanish olive oil
  • 500 g ripe tomatoes core removed
  • 250 g cucumber whole
  • 200 g red and green capsicum sliced
  • 100 ml coriander or parsley finely chopped
  • 15 g ground cumin
  • salt & pepper to taste

Garnish

  • 100 g shallot chopped
  • 100 g tomato finely chopped
  • 100 g cucumber finely chopped
  • 100 g red capsicum finely chopped
  • 100 g green capsicum finely chopped

Optional Sides

  • parmesan crisps optional
  • garlic croutons optional

Instructions

Preparation

  • Blend all soup base ingredients until smooth.
  • Chill the soup well.
  • Mix all garnish ingredients well.
  • Decorate the top of the soup with the garnish mixture.
