Materials
Soup Base
- 3-6 cloves garlic crushed
- 100 ml Spanish olive oil
- 500 g ripe tomatoes core removed
- 250 g cucumber whole
- 200 g red and green capsicum sliced
- 100 ml coriander or parsley finely chopped
- 15 g ground cumin
- salt & pepper to taste
Garnish
- 100 g shallot chopped
- 100 g tomato finely chopped
- 100 g cucumber finely chopped
- 100 g red capsicum finely chopped
- 100 g green capsicum finely chopped
Optional Sides
- parmesan crisps optional
- garlic croutons optional
Instructions
Preparation
- Blend all soup base ingredients until smooth.
- Chill the soup well.
- Mix all garnish ingredients well.
- Decorate the top of the soup with the garnish mixture.
