Materials

Main Ingredients

  • 300 g shelled deveined prawns
  • 200 g mushrooms chopped

Aromatics

  • 2 lemon grass stems cut into slices
  • 3 galangal small lengths or ginger if unavailable
  • 3 shallots smashed
  • 4 Kaffir lime leaves torn

Flavourings

  • 3-4 hot chillies just broken
  • 1000 ml water
  • 60 ml lime juice
  • 60-80 ml fish sauce
  • 2 coriander plants chopped roughly

Instructions

Cooking Instructions

  • Heat water to boiling.
  • Add lemon grass, shallots, galangal (or ginger), and Kaffir lime leaves. Bring to boil.
  • Add prawns and mushrooms. Stir.
  • Add chillies, lime juice, fish sauce, and coriander. Stir well.
  • Remove from heat and serve hot.

Notes

Galangal can be substituted with ginger if unavailable.
