Materials
Main Ingredients
- 300 g shelled deveined prawns
- 200 g mushrooms chopped
Aromatics
- 2 lemon grass stems cut into slices
- 3 galangal small lengths or ginger if unavailable
- 3 shallots smashed
- 4 Kaffir lime leaves torn
Flavourings
- 3-4 hot chillies just broken
- 1000 ml water
- 60 ml lime juice
- 60-80 ml fish sauce
- 2 coriander plants chopped roughly
Instructions
Cooking Instructions
- Heat water to boiling.
- Add lemon grass, shallots, galangal (or ginger), and Kaffir lime leaves. Bring to boil.
- Add prawns and mushrooms. Stir.
- Add chillies, lime juice, fish sauce, and coriander. Stir well.
- Remove from heat and serve hot.
Notes
Galangal can be substituted with ginger if unavailable.
