Materials
Spices and Aromatics
- 12 pieces dried red chillies soaked in water until soft
- 2 pieces shallots soaked in water until soft
- 2 cloves garlic
- 20 g galangal or 20g ginger
- 2 coriander roots
- 2 stalks lemongrass white part only
- 10 black peppercorns
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon cinnamon powder
- 1 teaspoon turmeric powder
- salt to taste
Oils and Optional Ingredients
- 75 ml coconut or peanut oil
- 4 teaspoons ground coriander optional
- 1 teaspoon shrimp paste optional
Instructions
Preparation
- Soak dried red chillies and shallots in water until soft.
- Chop chillies, shallots, garlic, galangal, coriander roots, and lemongrass.
- Place all chopped ingredients in a blender with oil and remaining ingredients.
- Blend until smooth.
- Store in the fridge.
