Materials

Spices and Aromatics

  • 12 pieces dried red chillies soaked in water until soft
  • 2 pieces shallots soaked in water until soft
  • 2 cloves garlic
  • 20 g galangal or 20g ginger
  • 2 coriander roots
  • 2 stalks lemongrass white part only
  • 10 black peppercorns
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon cinnamon powder
  • 1 teaspoon turmeric powder
  • salt to taste

Oils and Optional Ingredients

  • 75 ml coconut or peanut oil
  • 4 teaspoons ground coriander optional
  • 1 teaspoon shrimp paste optional

Instructions

Preparation

  • Soak dried red chillies and shallots in water until soft.
  • Chop chillies, shallots, garlic, galangal, coriander roots, and lemongrass.
  • Place all chopped ingredients in a blender with oil and remaining ingredients.
  • Blend until smooth.
  • Store in the fridge.
