  • 3 cloves garlic
  • 3 anchovy fillets
  • 400 g Italian plum tomatoes or any kind, from a tin
  • 120 g black olives pitted
  • 60 ml capers equivalent to 4 tablespoons
  • 2 tbsp chopped parsley
  • 50 g grated cheese for serving

  • Heat the olive oil in a frying pan over gentle heat. Add the chopped garlic and anchovy fillets, cooking until they are almost melted.
  • Stir in the tomatoes and their juices, black olives, and capers. Cook for 5 minutes.
  • When the pasta is ready, drain it and add the sauce. Mix well.
  • Sprinkle with chopped parsley and grated cheese before serving.
  • Serve immediately.

Adjust the amount of anchovies to taste if desired.
