- 500 g quality pumpkin chopped
- 3 cloves garlic crushed
- 500 ml vegetable stock
- 500 ml coconut milk or cream
- 5 ml oil coconut is best
- 1 tsp lemon grass finely sliced
- 5 ml lime juice
- 1 slice bacon optional

- Chop 500g quality pumpkin.
- Crush 3 cloves of garlic and finely slice 1 tsp of lemon grass.
- Heat 5ml of oil in a pot and sauté the garlic until transparent.
- Add chopped pumpkin, optional bacon, and 500ml of vegetable stock. Bring to a boil.
- Simmer until pumpkin is soft.
- Add 500ml of coconut milk or cream and simmer until pumpkin is fully cooked.
- Remove lemon grass, blend the soup until smooth.
- Add lime juice before serving. Check seasoning and add salt and pepper if needed.
- Garnish with drops of coconut cream.
Notes
Use coconut milk for a richer soup or coconut cream for a lighter version.
