  • 500 g quality pumpkin chopped
  • 3 cloves garlic crushed
  • 500 ml vegetable stock
  • 500 ml coconut milk or cream
  • 5 ml oil coconut is best
  • 1 tsp lemon grass finely sliced
  • 5 ml lime juice
  • 1 slice bacon optional

  • Chop 500g quality pumpkin.
  • Crush 3 cloves of garlic and finely slice 1 tsp of lemon grass.
  • Heat 5ml of oil in a pot and sauté the garlic until transparent.
  • Add chopped pumpkin, optional bacon, and 500ml of vegetable stock. Bring to a boil.
  • Simmer until pumpkin is soft.
  • Add 500ml of coconut milk or cream and simmer until pumpkin is fully cooked.
  • Remove lemon grass, blend the soup until smooth.
  • Add lime juice before serving. Check seasoning and add salt and pepper if needed.
  • Garnish with drops of coconut cream.

Notes

Use coconut milk for a richer soup or coconut cream for a lighter version.
