  • 250 g potatoes peeled & thinly sliced
  • 1 tbsp butter for greasing
  • 1 egg
  • 120 ml cream
  • 60 g cheddar cheese grated
  • 4 rashers bacon chopped/diced
  • 1 onion sliced thinly or spring onion

Seasonings

  • to taste salt
  • to taste pepper
  • 1 tsp mustard

Instructions

  • Preheat oven to 180°C (moderate oven).
  • Butter an ovenproof dish and layer the bottom with potato slices.
  • Sprinkle with bacon, onion, and cheese. Follow with a layer of potato and repeat as per the first layer.
  • Combine egg, cream, salt, pepper, and mustard until smooth.
  • Pour the mixture over the layered potatoes.
  • Cover with tinfoil and bake for 20 minutes.
  • Remove tinfoil and bake further 20 minutes or until the top is golden.

Notes

Ensure potatoes are thinly sliced for even cooking.
