- 250 g potatoes peeled & thinly sliced
- 1 tbsp butter for greasing
- 1 egg
- 120 ml cream
- 60 g cheddar cheese grated
- 4 rashers bacon chopped/diced
- 1 onion sliced thinly or spring onion

- 1 tsp mustard

- Preheat oven to 180°C (moderate oven).
- Butter an ovenproof dish and layer the bottom with potato slices.
- Sprinkle with bacon, onion, and cheese. Follow with a layer of potato and repeat as per the first layer.
- Combine egg, cream, salt, pepper, and mustard until smooth.
- Pour the mixture over the layered potatoes.
- Cover with tinfoil and bake for 20 minutes.
- Remove tinfoil and bake further 20 minutes or until the top is golden.
