- 40 ml peanut oil
- 3 chillies seeded and sliced (or more to taste)
- 60 ml garlic sliced
- 180 g pad thai rice noodles soaked in boiling water for 10 minutes, drained, rinsed with cold water, and left to drain
- 2 eggs beaten
- 250 g prepared tofu cubed
- 40 ml fish sauce
- 20 ml palm sugar
- 250 ml mung bean sprouts
- 40 ml chopped garlic chives
- 40 ml chopped coriander
- 40 ml chopped roasted peanuts for garnish

- Heat peanut oil in a large wok or frying pan over medium-high heat.
- Add sliced chillies and garlic, and stir-fry until fragrant.
- Add the drained rice noodles and stir-fry for a couple of minutes.
- Push the noodles to one side of the pan, pour in the beaten eggs, and scramble them.
- Mix the eggs with the noodles, then add the tofu, fish sauce, and palm sugar.
- Stir-fry until everything is well combined and heated through.
- Add mung bean sprouts, garlic chives, and coriander, and stir-fry for another minute.
- Serve the pad thai garnished with chopped roasted peanuts.
Notes
Adjust the amount of chillies and fish sauce to taste. You can also add other vegetables like bean sprouts or shredded carrots.
