Materials

Main Ingredients

  • 8 chicken legs, skin on
  • 1 large onion, sliced into rings
  • 2 carrots, cut into strips
  • 2 spring onions, cut lengthwise
  • 1 small tomato, chopped

Spices and Seasonings

  • to taste cracked black pepper
  • to taste punch curry powder
  • to taste salt

Oil

  • as needed olive oil plus extra for frying

Instructions

Preparation

  • Place chicken legs in a large bowl with all ingredients. Mix well, adding extra oil if needed to coat the chicken legs.
  • Cover and marinate for a minimum of 12 hours.

Cooking

  • Remove legs from marinade and drain well.
  • Fry in hot oil until golden brown.
  • Place legs in a saucepan, cover with boiling water. Cook until all water evaporates, then add remaining marinade ingredients and a little more water. Cook until all tender.

Notes

Serve with rice. This is not a stew.
