Materials
Main Ingredients
- 8 chicken legs, skin on
- 1 large onion, sliced into rings
- 2 carrots, cut into strips
- 2 spring onions, cut lengthwise
- 1 small tomato, chopped
Spices and Seasonings
- to taste cracked black pepper
- to taste punch curry powder
- to taste salt
Oil
- as needed olive oil plus extra for frying
Instructions
Preparation
- Place chicken legs in a large bowl with all ingredients. Mix well, adding extra oil if needed to coat the chicken legs.
- Cover and marinate for a minimum of 12 hours.
Cooking
- Remove legs from marinade and drain well.
- Fry in hot oil until golden brown.
- Place legs in a saucepan, cover with boiling water. Cook until all water evaporates, then add remaining marinade ingredients and a little more water. Cook until all tender.
Notes
