Materials
Base Ingredients
- 250 g butter divided into 60g for cooking and 190g for topping
- 1 teaspoon fresh crushed garlic
- 1 medium onion, chopped
- 500 g chicken livers
- 1 teaspoon sage
- 1 teaspoon parsley flakes
- 1 teaspoon chives (ground dried herbs)
- 4 tablespoons brandy
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 bay leaf for garnish
Instructions
Cooking Instructions
- Melt 60g of butter in a pan. Add onion and garlic, sauté until fragrant.
- Add chicken livers and sauté for 3-5 minutes. Add brandy and herbs, continue to cook for a few more minutes.
- Place 190g of butter and all other ingredients except the bay leaf in a blender. Blend with liver mixture, remaining herbs, salt, and pepper until smooth.
- Transfer to a small bowl. Melt remaining 50g of butter and pour over the pâté. Decorate with a bay leaf.

Serve chilled with crackers or crusty bread.
