Materials

Base Ingredients

  • 250 g butter divided into 60g for cooking and 190g for topping
  • 1 teaspoon fresh crushed garlic
  • 1 medium onion, chopped
  • 500 g chicken livers
  • 1 teaspoon sage
  • 1 teaspoon parsley flakes
  • 1 teaspoon chives (ground dried herbs)
  • 4 tablespoons brandy
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bay leaf for garnish

Instructions

Cooking Instructions

  • Melt 60g of butter in a pan. Add onion and garlic, sauté until fragrant.
  • Add chicken livers and sauté for 3-5 minutes. Add brandy and herbs, continue to cook for a few more minutes.
  • Place 190g of butter and all other ingredients except the bay leaf in a blender. Blend with liver mixture, remaining herbs, salt, and pepper until smooth.
  • Transfer to a small bowl. Melt remaining 50g of butter and pour over the pâté. Decorate with a bay leaf.

Notes

Serve chilled with crackers or crusty bread.
