Materials

Salad Base

  • 200 g mixed salad greens such as spinach, rocket, and lettuce
  • 50 g baby spinach leaves

Toppings

  • 50 g sliced cucumber
  • 50 g cherry tomatoes halved
  • 30 g sliced red onion

Dressing

  • 30 ml olive oil
  • 15 ml balsamic vinegar
  • 1 tsp Dijon mustard
  • to taste salt
  • to taste black pepper

Instructions

Preparation

  • Wash and dry all salad greens and vegetables.
  • In a large salad bowl, combine the mixed salad greens, baby spinach, cucumber, cherry tomatoes, and red onion.
  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately.
