Materials
Salad Base
- 200 g mixed salad greens such as spinach, rocket, and lettuce
- 50 g baby spinach leaves
Toppings
- 50 g sliced cucumber
- 50 g cherry tomatoes halved
- 30 g sliced red onion
Dressing
- 30 ml olive oil
- 15 ml balsamic vinegar
- 1 tsp Dijon mustard

Preparation
- Wash and dry all salad greens and vegetables.
- In a large salad bowl, combine the mixed salad greens, baby spinach, cucumber, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
