Materials
Base Ingredients
- 2 cloves garlic
- 3 bird’s eye chilli adjust to taste
- to taste sea salt
- 2 cups shredded green paw paw or substitute with green mango or cucumber
Optional Ingredients
- 2 tablespoons diced prosciutto optional
- 3 cherry tomatoes
- 2-3 long shallots
- 15 ml fish sauce
- 15 ml fresh lime juice
- 15 ml tamarind juice optional
- to taste roasted peanuts for garnish
- 3 small coastal chillies for garnish
Instructions
Preparation
- Pound garlic, chilli, and sea salt with a mortar and pestle until well combined.
- Add diced prosciutto (optional), cherry tomatoes, and long shallots. Pound until coarsely crushed.
- Add fish sauce, lime juice, and tamarind juice (optional). Mix well.
- Combine with shredded green paw paw.
- Mix thoroughly.
- Garnish with roasted peanuts and small coastal chillies.
- Serve chilled.
