Materials

Base Ingredients

  • 2 cloves garlic
  • 3 bird’s eye chilli adjust to taste
  • to taste sea salt
  • 2 cups shredded green paw paw or substitute with green mango or cucumber

Optional Ingredients

  • 2 tablespoons diced prosciutto optional
  • 3 cherry tomatoes
  • 2-3 long shallots
  • 15 ml fish sauce
  • 15 ml fresh lime juice
  • 15 ml tamarind juice optional
  • to taste roasted peanuts for garnish
  • 3 small coastal chillies for garnish

Instructions

Preparation

  • Pound garlic, chilli, and sea salt with a mortar and pestle until well combined.
  • Add diced prosciutto (optional), cherry tomatoes, and long shallots. Pound until coarsely crushed.
  • Add fish sauce, lime juice, and tamarind juice (optional). Mix well.
  • Combine with shredded green paw paw.
  • Mix thoroughly.
  • Garnish with roasted peanuts and small coastal chillies.
  • Serve chilled.

Notes

Green paw paw aids digestion. Substitute with green mango or cucumber if paw paw is unavailable.
