Materials

Nuts and Seeds

  • 160 g hazelnuts 2/3 cup
  • 320 g sesame seeds 2 cups

Spices

  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 2 tsp ground black pepper

Instructions

Preparation

  • Preheat oven to 180°C.
  • Spread 2/3 cup (160g) hazelnuts on an oven tray and roast for 3-5 minutes until roasted. Rub off skins between towels.
  • At the same time, roast 2 cups (320g) sesame seeds till golden, as well as 2 teaspoons each of coriander and cumin seeds until aromatic.
  • Note: All ingredients can be placed in separate areas on the oven tray till cooked.

Blending

  • Cool the roasted nuts and seeds.
  • Blend hazelnuts until fine, then add sesame seeds, coriander, cumin, and 2 teaspoons of ground black pepper. Mix well.

Notes

Dukkah can be used as a dip with olive oil and bread, or as a seasoning for meats and vegetables.
