- 2 eggs lightly beaten
- 880 g corn kernels drained (2 × 440g cans)
- 40 ml cornflour
- 250 g chicken breast fillet finely chopped (you can use chicken mince)
- 40 ml fresh coriander leaves
- 5 ml sugar
- 20 ml light soy sauce
- 40 ml oil

- Combine eggs, corn, cornflour, chicken, sugar, coriander, and soy sauce in a bowl, mix well.
- Heat oil in a pan and drop level tablespoons of mixture into the pan. Cook on both sides until golden brown.
- Drain on paper towel and serve.
Notes
Ensure the oil is hot enough to prevent the fritters from absorbing too much oil.
