Materials
Base Ingredients
- 1 litre vegetable or fruit puree such as cucumber, tomato, or melon
- 250 ml vegetable or chicken stock
- 40 ml olive oil
- 20 ml lemon juice
- 5 g salt
- 5 g pepper
Garnishing
- 1 handful fresh herbs such as mint or basil (approximately 15g)
- 1 handful croutons approximately 30g
Instructions
Preparation
- Blend the vegetable or fruit puree, stock, olive oil, lemon juice, salt, and pepper until smooth.
- Add ice and blend again to achieve the desired consistency.
- Chill the soup in the refrigerator for at least 1 hour.
- Serve the soup in bowls, topped with fresh herbs and croutons.
Notes
Adjust the seasoning to taste. You can use different purees for variety.
