Materials

Base Ingredients

  • 1 litre vegetable or fruit puree such as cucumber, tomato, or melon
  • 250 ml vegetable or chicken stock
  • 40 ml olive oil
  • 20 ml lemon juice
  • 5 g salt
  • 5 g pepper

Garnishing

  • 1 handful fresh herbs such as mint or basil (approximately 15g)
  • 1 handful croutons approximately 30g

Instructions

Preparation

  • Blend the vegetable or fruit puree, stock, olive oil, lemon juice, salt, and pepper until smooth.
  • Add ice and blend again to achieve the desired consistency.
  • Chill the soup in the refrigerator for at least 1 hour.
  • Serve the soup in bowls, topped with fresh herbs and croutons.

Notes

Adjust the seasoning to taste. You can use different purees for variety.
