Main Ingredients

  • 1500 g chicken pieces
  • salt & pepper to taste
  • 40 ml oil 2 tablespoons
  • 1 onion finely chopped
  • 2 cloves garlic crushed
  • 125 ml dry white wine 1 cup
  • 10 ml vinegar 1/2 tablespoon
  • 1 chicken stock cube
  • 125 ml water 1/2 cup
  • 5 g dried basil 1 teaspoon
  • 5 g sugar 1 teaspoon
  • 400 g chopped tomatoes 1 can
  • 3 anchovy fillets
  • 60 g black olives 1 can, pitted
  • 15 ml chopped parsley 1 tablespoon

Cooking Instructions

  • Sprinkle chicken with salt & pepper. Heat oil in a pan and brown chicken pieces on all sides. Transfer chicken to an oven-proof dish.
  • Leave approximately 1 tablespoon of pan juices in the pan. Add onion and garlic, cook until onion is tender.
  • Add wine and vinegar, boil until reduced by half. Crumble stock cube into the mixture and add water.
  • Add dried basil, sugar, chopped tomatoes, anchovy fillets, and black olives. Stir to combine.
  • Pour the mixture over the chicken in the oven-proof dish. Bake in a preheated oven at 180°C for 30-35 minutes, or until the chicken is cooked through.
  • Garnish with chopped parsley before serving.
