Materials
Main Ingredients
- 1 small cauliflower, cut into florets
Sauce Ingredients
- 45 g butter
- 3 tbsp flour
- 125 ml milk
- 60 g Cheddar cheese
- to taste salt
- to taste pepper
Topping Ingredients
- 125 ml fresh breadcrumbs
- 30 g Cheddar cheese, extra
- 15 g butter, extra (melted)

- Cook cauliflower florets in boiling salted water until just tender. Drain.
- Put butter in a pan and stir over medium heat until melted.
- Add flour, stir until smooth. Add milk gradually, stir until smooth and sauce thickens and boils.
- Remove from heat, add grated cheese, salt, and pepper. Stir until cheese melts.
- Spread half of the cheese sauce over the base of an ovenproof dish. Arrange cauliflower on top of the sauce.
- Spread remaining sauce over cauliflower.
- Combine breadcrumbs with extra cheese and melted butter. Sprinkle crumb mixture on top of cauliflower.
- Bake in a moderate oven (180°C) for 15-20 minutes, until golden.

Ensure the cauliflower is tender but not overcooked to maintain texture.
