Materials

Main Ingredients

  • 1 kg pork spare ribs

Marinade

  • 80 ml BBQ sauce
  • 20 ml lemon juice
  • 5 ml chilli sauce optional
  • 5 ml Chinese 5 spice
  • 500 ml ginger wine or dry sherry
  • 40 ml soy sauce
  • 20 ml honey
  • 2 cloves garlic (crushed)
  • 1 piece ginger (grated) 2.5 cm

Instructions

Preparation

  • Place spare ribs in a large pan of water, bring to a boil, cover, and boil for 20 minutes. Strain.
  • Combine all other ingredients in a bowl. Pour over spare ribs and marinate overnight.

Cooking

  • Place marinated spare ribs in a baking dish. Heat oven to moderate 180°C.
  • Cook for approximately 1 hour, basting often. Pork should be tender.
