Lemon Butter

Materials

  • 4 eggs
  • 500 ml lemon juice fresh lemons
  • 500 g white sugar
  • 125 g butter

Instructions

  • Beat eggs. Slowly adding half the sugar eggs and continue beating.
    4 eggs, 500 g white sugar
  • Grate rind of lemons, squeeze juice.
  • Place butter, sugar in pan over hot water (double boiler).
    125 g butter, 500 g white sugar
  • When butter is melted add juice & rind. stir continuously.
    500 ml lemon juice
  • Then add strained eggs.
  • Whisk until THICK & SMOOTH about 3 or 4 min.
  • BOTTLE & SEAL. STORE IN FRIDGE.

Notes

* For PASSIONFRUIT BUTTER use 1/2 cup passionfruit pulp in place of lemons.
NOTE: JUICE of 1 or 2 lemons or LIMES is OK in this mix.
