Materials
- 500 g chopped dates
- 250 g butter
- 2/3 cup brown sugar
- 1 Juice of 1 large lemon
- 1/2 cup chopped roasted almonds or grilled/crystallized ginger
- 1 pkt Scotch Finger Biscuits
- OR Arrowroot or Ginger Nuts*
- 1/4 cup Coconut for topping
Instructions
- Melt butter, add sugar, date.
- Stir till dates are soft.
- Crush biscuits into chunks and lemon rind.
- Mix well. Add lemon juice & date mix. Stir well.
- Add date mix to biscuit mix.
- Pour into paper-lined lamington tray.
- Sprinkle with coconut.
- *If using ginger nuts add 2 tbsp ground ginger.
- Chill in fridge overnight – next day CUT INTO squares & STORE IN AIRTIGHT CONT. IN FRIDGE.Delicious & easy to make.
