Materials
- 2 tablespoons softened butter
- 1/2 cup sugar caster sugar is best
- 1/2 cup mashed pumpkin
- 2 cups self-raising flour
- 1 egg lightly beaten
- 80 mls milk
- 1 tablespoon custard powder optional
Instructions
- Beat butter and sugar until fluffy.
- Add egg and mix well.
- Add mashed pumpkin and mix well.
- Then add a bit at a time sifted self-raising flour & custard powder.
- You may need to add a little milk near the end, before final addition of flour. Continue to add milk until dough comes off the side of the bowl.
- Turn out onto floured bench top and press flat to approx 1.5 cm thick. Cut with rounds and place close together on greased and floured tray.
- Bake in hot oven (200-220°C) for approx 15-20 min.
