Flo’s Pumpkin Scones

Materials

  • 2 tablespoons softened butter
  • 1/2 cup sugar caster sugar is best
  • 1/2 cup mashed pumpkin
  • 2 cups self-raising flour
  • 1 egg lightly beaten
  • 80 mls milk
  • 1 tablespoon custard powder optional

Instructions

  • Beat butter and sugar until fluffy.
  • Add egg and mix well.
  • Add mashed pumpkin and mix well.
  • Then add a bit at a time sifted self-raising flour & custard powder.
  • You may need to add a little milk near the end, before final addition of flour. Continue to add milk until dough comes off the side of the bowl.
  • Turn out onto floured bench top and press flat to approx 1.5 cm thick. Cut with rounds and place close together on greased and floured tray.
  • Bake in hot oven (200-220°C) for approx 15-20 min.
