Materials
- Firm but ripe peaches OR apricots
- Brandy enough to cover the fruit
- Sugar 125g for each 500g of fruit
Instructions
- Prepare the fruit: Wash the peaches or apricots thoroughly. Using a needle or a similar tool, prick the skin of each fruit all over.
- Layer with sugar: In a large bowl, sprinkle the sugar evenly over the prepared fruit.
- Cover with brandy: Pour brandy over the sugared fruit, ensuring that all the fruit is well covered.
- Stir gently: Over the next 24 hours, stir the fruit gently several times to help the sugar dissolve and the fruit absorb the brandy.
- Jar and seal: After 24 hours, carefully transfer the brandied fruit and liquid into clean, screw-top jars. Seal the jars tightly.
- Store: Store the jars in a cool, dark place for at least 3 months before using. This allows the flavors to develop and mature.
