Apricot – Honey Muesli Bars (No Baking Required)

Materials

Wet

  • 125 g butter
  • 1/3 cup honey
  • 1/3 cup peanut or any nut paste
  • 1/4 cup brown sugar
  • TURN OFF HEAT. Simmer for 4 MINUTES.

Dry

  • 1 cup puffed millet
  • 1 cup puffed brown rice
  • 1.5 cups roasted muesli
  • 1/2 cup chopped apricots dried
  • 1/4 cup coconut
  • 1/4 cup toasted sesame seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup sliced almonds
  • 1/4 cup sultanas

Instructions

Wet

  • Heat, stir until liquid.
  • TURN OFF HEAT. Simmer for 4 MINUTES.

Dry

  • Mix the dry together well
  • Combine warm liquid ingredients with dry ingredients, and mix well

Preparing

  • Line a lamington tin with baking paper.
  • Pour ingredients into lined tin & press down.
  • CHILL for 1 or 2 HRS.
  • CUT INTO SHAPES.
  • Wrap in greaseproof paper & store in fridge.

Notes

Both Muesli Bars will keep in airtight containers in fridge for up to 6 MONTHS! – if not eaten before.
Great snacks & good for school or travelling.
