Creamy Chicken & Mushroom Pasta Bake

Materials

Sauce Base

  • 500 grams Mushrooms sliced
  • 3 tbsp Salted Butter
  • 1.5 cup Cream
  • 1.5 cup Milk
  • 3 tbsp Lemon Juice
  • 3 tbsp Corn Flour
  • 6 cloves Garlic crushed
  • 1.5 cups Sour Cream

Base

  • 800 grams Chickpea pasta
  • 750 grams Chicken breast
  • 500 grams Broccoli
  • 2 tbsp Table salt
  • 2 L Water

Topping

  • 1.5 cups Mozzarella Cheese
  • 0.5 cup Chives

Instructions

Preparation

  • Pre-heat oven to 180℃
  • Prepare pot for cooking pasta with water and salt and put on the heat.
    2 tbsp Table salt, 2 L Water
  • Slice the mushrooms into slices approx. 5mm thick.
    500 grams Mushrooms sliced
  • Cut the broccoli into small pieces.
    500 grams Broccoli
  • Dice the chicken in small cubes.
    750 grams Chicken breast

Sauce

  • Mix together the milk and corn flour/corn starch.
    1.5 cup Milk, 3 tbsp Corn Flour
  • Melt the butter in a large, oven-proof pan then cook the mushrooms until golden brown.
    3 tbsp Salted Butter, 500 grams Mushrooms sliced
  • Add garlic and stir in well.
    6 cloves Garlic crushed
  • Pour the pasta into the boiling water, and cook as per the instructions on packet.
    800 grams Chickpea pasta
  • To the sauce, add the cream and milk mixture to the mushrooms and allow to cook until thickened.
    1.5 cup Cream
  • One the sauce starts to thicken, add the chicken and cook until the chicken is done.
    750 grams Chicken breast
  • Once the chicken is cooked, to the sauce, add lemon juice, and chives.
    3 tbsp Lemon Juice, 0.5 cup Chives
  • Drain the pasta well, and add to the sauce, stir well.
  • Mix in the sour cream, and the broccoli.
    1.5 cups Sour Cream, 500 grams Broccoli

Baking

  • Cover the top with Mozzarella cheese.
    1.5 cups Mozzarella Cheese
  • Place the lid over the top of the cooking pot, and place in the oven for 10 minutes.
  • After 10 minutes, remove the lid from the pot, and if required, add additional cheese to cover the top. Cook for a further 8 minutes.
  • Increase the oven temperature to 220℃ and cook for a further 5 minutes, or until the top is golden brown.
