Pizza Base Dough

As the months get cooler, we unpack our smoker and pizza oven (OzPig) to spend the evening making pizza for the week and enjoying a toasted marshmallow over the fire. The basic recipe below is what we follow to make about 6 x 10″ pizzas. It would be possible to make them slightly larger by rolling it thinner or make more by cutting the dough smaller.

Equipment

  • 1 Oven Preheated to 50 degrees
  • 1 Large Pyrex bowl
  • 1 Scales
  • 1 Measuring spoon set
  • 1 Pizza stone
  • 1 Pizza oven (OzPig)

Materials

  • 600 grams Plain Flour
  • 6 grams Yeast
  • 2.5 tsp Garlic Salt
  • 4 tsp White Sugar
  • 4 tbsp Olive Oil Extra Virgin, or flavoured with garlic
  • 330 ml Tap water warm

Instructions

Making the dough

  • Pre heat the oven to 50 degrees.
  • Mix all the dry ingredients together.
    600 grams Plain Flour, 6 grams Yeast, 2.5 tsp Garlic Salt, 4 tsp White Sugar
  • Mix the warm water and the olive oil together.
    4 tbsp Olive Oil, 330 ml Tap water
  • Slowly add the water and oil mix to the dry ingredients.
  • Turn the oven off (it only needs to be warm enough to help proof the dough).
  • Knead the dough for at least 5 minutes.
  • Pour a small amount of oil into the bowl used for proofing. Coat the entire inner surface to give it a good coating.
  • Place the dough into the bowl.
  • Cover the bowl in gladwrap.
  • Place the bowl in the oven.
  • After a few hours, check on the dough.

Rolling the base

  • Pre-dust the working area with some flour.
  • Take the dough out of the oven (it will look somewhat like the image at the top).
  • Punch the dough to remove the larger air bubles.
  • Split the dough into 6 approx. equal size balls.
  • Using a rolling pin, roll out into a circular shape.

Pre-cooking the base

  • Ensure that the fire is roaring, and that the pizza stone is on the lowest rack and at temperature.
  • Dust the pizza paddle with flour and transfer a base to the paddle.
  • Place the base onto the pizza stone, close the door and time three minutes.
  • After the three minutes, remove the base, it is now ready for adding the toppings.
